In the 1940s, Hanoi was in a serious shortage of milk. People have devised a way to beat egg yolks to replace milk - and that was how egg coffee was born. Cup of hot egg coffee is served in a small cup, placed in a tray of hot water to maintain its temperature. The texture of this drink is quite dense compared to regular coffee, with a strong Vietnamese espresso underneath perfectly offset by the creamy sweet foam on top.

Ingredients:

  1. Coffee Ground
  2. Egg yorks
  3. Honey
  4. Condensed Milk

Instructions:

Start by brewing your favorite coffee, or if you happen to own a Vietnamese filter cup, you can follow this instruction:

Step 1: The filter and cup first need to be coated with boiled water to ensure cleanliness and add warm. Pour about 17-20g of coffee into the filter, shake gently to spread the coffee flat, press down tightly. Then add 15ml of boiling water to just cover the filter surface. Wait for about 30 seconds, then add more boiling water to 3/4 of the filter cup, cover, wait for the coffee to drop to the cup below.

Step 2: While your coffee is being brewed. Put egg yolks into a bowl. Add in 3-4 drops of honey, beat with a whisk for about 5 - 7 minutes. Eggs are the most important factor for a delicious egg coffee. You should use freshest eggs that you can find.
